Guests can enjoy decadent meats brought to life in their robust onsite smoker and embellished with an array of Asian spices and ingredients. The colorful truck is stationed in the sprawling, breezy patio that sits adjacent to Fiery Whiskers Distillery. At Sí Baby-Q, Simone marries the flavor profiles of her Singaporean upbringing with Jonathan’s iconic Texas BBQ fare to usher in a creative new wave of barbecue.

Pitmaster Jonathan Lagos is a Mexican American barbecue expert who honed his craft at Austin’s renowned Terry Black’s BBQ. Now, as co-founder of Sí Baby-Q, he blends his heritage with Texas barbecue traditions, creating inventive dishes like the Fiend’s Brisket Elote, Agave Pork Ribs, and a mouth-watering Mexi-Cali Tri Tip taco. Lagos’s innovative approach brings a bold, cross-cultural flavor to Austin’s barbecue scene.

Chef Simone Tong is a Chengdu-born, NYC-trained chef known for her bold, creative take on Chinese cuisine. A graduate of ICE and alum of wd~50 and Alder, she gained acclaim with Little Tong Noodle Shop and Silver Apricot in NYC. Now based in Austin, she brings Chinese flavors to Southern barbecue as co-founder of Sí Baby-Q.
